  • 2 cups sharp cheddar cheese, shredded (about 200g)
  • 1 cup smoked gouda, shredded (about 100g)
  • 6 slices thick-cut bacon, cooked until crispy and chopped
  • 1/2 cup beer (lager or pale ale, about 120ml)
  • 4 oz cream cheese, softened (about 115g)
  • 1/2 cup sour cream (about 120ml)
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon hot sauce (optional)
  • Salt and freshly ground black pepper, to taste
  • Soft pretzel bites, for serving

Instructions

  1. Place 6 thick-cut bacon slices in a cold skillet. Turn the heat to medium and cook, turning occasionally, until crisp (about 8-10 minutes). Transfer to paper towels to drain and cool. Once cooled, chop into small pieces.
  2. Using a sharp grater, shred 2 cups sharp cheddar and 1 cup smoked gouda.
  3. In a medium saucepan over low heat, add 4 oz softened cream cheese and 1/2 cup sour cream. Stir gently until creamy and smooth, about 3-4 minutes.
  4. Slowly pour in 1/2 cup beer while whisking to blend. Add 2 minced garlic cloves, 1 teaspoon onion powder, 1 teaspoon Worcestershire sauce, and optional 1/2 teaspoon hot sauce. Stir until combined and aromatic, about 2 minutes.
  5. Gradually add shredded cheddar and gouda in batches, stirring constantly until fully melted and smooth. Keep heat low to prevent separation.
  6. Remove the dip from heat and gently fold in the chopped bacon pieces. Taste and adjust salt and pepper as needed.
  7. Transfer the dip to a serving bowl or slow cooker set on low to keep warm. Serve immediately with soft pretzel bites for dunking.

Notes

Keep heat low when melting cheese to prevent separation. Use fresh shredded cheese for best texture. Add crispy bacon at the end to maintain crunch. If dip is too thick, stir in a splash of beer or milk. Can be made a day ahead and reheated gently.
