Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, black cocoa powder, baking powder, baking soda, and salt until no lumps remain.
  3. In a large bowl, whisk together granulated sugar, brown sugar, and vegetable oil until well combined. Add eggs one at a time, whisking well after each. Stir in buttermilk and vanilla extract until smooth.
  4. Add dry ingredients to wet ingredients in two additions, stirring gently with a rubber spatula until just combined. Do not overmix.
  5. Pour in hot coffee (or hot water) and stir gently until incorporated. Batter will be thin.
  6. Divide batter evenly among the 12 liners, filling each about ¾ full.
  7. Bake for 18-22 minutes, until a toothpick inserted in the center comes out with a few moist crumbs. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. For the buttercream: In a large bowl, beat softened butter with an electric mixer on medium speed until smooth and creamy, about 2 minutes. Add sifted powdered sugar one cup at a time, beating on low after each. Add vanilla extract, salt, and 2 tablespoons heavy cream. Beat on medium-high speed for 3-4 minutes until light and fluffy. Add more cream if needed.
  9. Transfer buttercream to a piping bag fitted with a large round tip (or a zip-top bag with a corner snipped off). Pipe a tall, rounded dollop on each cupcake, pulling straight up to create a peak. Add two mini chocolate chips or dots of black sanding sugar for eyes.
