Ingredients

Scale
  • 6 cups apples, peeled, cored, and sliced (about 45 medium apples; mix of Granny Smith and Honeycrisp or Fuji)
  • 1/3 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter
  • 3/4 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly with butter or non-stick spray.
  2. In a large skillet or saucepan over medium heat, melt the 1/2 cup of unsalted butter. Swirl the pan occasionally. The butter will foam, then subside, and brown specks will form at the bottom. When the butter smells nutty and turns golden amber (about 5-7 minutes), remove from heat immediately and pour into a heat-safe bowl to stop cooking.
  3. In a medium mixing bowl, whisk together 3/4 cup rolled oats, 3/4 cup all-purpose flour, 1/2 cup packed brown sugar, 1/4 cup granulated sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Pour the warm brown butter over the dry ingredients and stir with a fork until crumbly and all dry bits are coated. Set aside.
  4. In a large mixing bowl, combine the sliced apples, 1/3 cup granulated sugar, 2 tablespoons flour, 1 tablespoon lemon juice, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1/4 teaspoon salt. Toss until apples are evenly coated.
  5. Spread the apple mixture evenly in the prepared baking dish. Sprinkle the brown butter oat streusel evenly over the top. Do not press down; leave it loose and craggy.
  6. Place the dish on a baking sheet and bake for 40-45 minutes, or until the topping is golden brown and the apple filling is bubbling around the edges. If the topping browns too quickly, tent loosely with foil for the last 10 minutes.
  7. Let the crisp cool on a wire rack for at least 15-20 minutes before serving. Serve warm, preferably with vanilla ice cream or whipped cream.

Notes

For best results, use a mix of tart and sweet apples (e.g., Granny Smith and Honeycrisp). Toast the oats for 5-7 minutes at 350°F before adding to the streusel for extra crunch. Let the crisp rest for 15-20 minutes after baking to allow the filling to set. You can assemble the crisp (without baking) up to 24 hours in advance and refrigerate; add about 10 minutes to the baking time.
