This creamy, spicy, and utterly addictive Buffalo chicken dip is the ultimate game day crowd-pleaser. Made in the slow cooker with simple ingredients, it’s a set-it-and-forget-it recipe that delivers bold flavor and velvety texture every single time.

Ingredients

Scale
  • 1.5 pounds boneless, skinless chicken breasts (fresh or frozen)
  • 16 ounces cream cheese, softened and cubed
  • 1 cup Buffalo wing sauce (such as Frank’s RedHot Original)
  • 1 ounce packet ranch dressing mix (such as Hidden Valley)
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup blue cheese crumbles (optional, for garnish)
  • 34 stalks green onions, sliced (for garnish)

Instructions

  1. Place the chicken breasts in the bottom of a 4-6 quart slow cooker. Scatter the cubed cream cheese over the chicken, then pour the Buffalo wing sauce evenly on top. Sprinkle the ranch dressing mix over everything. Do not stir.
  2. Cover and cook on low for 3-4 hours, until the chicken is fork-tender and easily shreddable. Check at 2.5 hours if using thawed chicken.
  3. Remove the cooked chicken to a cutting board or large bowl. Shred with two forks or use a hand mixer on low speed until bite-sized pieces form.
  4. Return the shredded chicken to the slow cooker. Add 1.5 cups of the shredded cheddar cheese and stir until the cream cheese is fully incorporated and the dip is smooth and creamy.
  5. Sprinkle the remaining 1/2 cup of cheddar cheese over the top. Cover and cook on low for another 15-20 minutes, until the cheese is melted and bubbly.
  6. Garnish with sliced green onions and blue cheese crumbles (if using). Serve warm directly from the slow cooker on the ‘warm’ setting.

Notes

For best results, use full-fat cream cheese and shred your own cheddar cheese from a block. If the dip becomes too thick after sitting, stir in a splash of milk or chicken broth. This dip can be made up to 2 days ahead and reheated. It also freezes well for up to 3 months.
