This creamy Buffalo chicken dip with blue cheese crumble is the ultimate game-day appetizer. It’s quick, easy, and packed with tangy blue cheese, spicy Buffalo sauce, and rich cream cheese for an unforgettable crowd-pleaser.

Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1/2 cup Buffalo wing sauce (preferably Frank’s RedHot Original)
  • 1/2 cup ranch dressing
  • 1/2 cup sour cream
  • 2 cups cooked chicken, shredded (rotisserie chicken works well)
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup blue cheese crumbles
  • 1/4 cup green onions, sliced

Instructions

  1. Preheat your oven to 375°F. Let cream cheese sit at room temperature to soften, or microwave on low for 15 seconds.
  2. Shred the cooked chicken using two forks, leaving some texture with a few larger chunks.
  3. In a medium bowl, combine softened cream cheese, Buffalo wing sauce, ranch dressing, and sour cream. Mix with a hand mixer on medium speed until smooth and uniform in color.
  4. Fold in shredded chicken, shredded cheddar cheese, and half of the blue cheese crumbles until evenly distributed.
  5. Spoon the mixture into a greased 8×8 inch baking dish and spread into an even layer.
  6. Sprinkle the remaining blue cheese crumbles evenly over the top.
  7. Bake for 18-20 minutes until bubbly around the edges and lightly golden on top. For a browner top, broil for the last 2 minutes, watching carefully.
  8. Let the dip rest for 5 minutes out of the oven to set. Garnish with sliced green onions just before serving.

Notes

For a milder version, use only 1/4 cup Buffalo sauce and add extra ranch. For extra heat, add cayenne pepper. Assemble a day ahead and refrigerate; add 5 minutes to bake time. Serve with tortilla chips, celery sticks, or pretzel chips. Leftovers keep in the fridge for up to 4 days or freeze for up to 3 months.
