  • 1 lb thin-cut bacon
  • 1 cup packed brown sugar
  • 2 tablespoons melted butter
  • 1 teaspoon smoked paprika
  • Pinch of cayenne pepper (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a rimmed baking sheet with aluminum foil and place a wire cooling rack on top.
  2. Cut each bacon slice into thirds (about 2-3 inches long).
  3. Wrap each little smokie with a piece of bacon, overlapping ends slightly. Place seam-side down on the wire rack.
  4. In a small bowl, mix brown sugar with melted butter, smoked paprika, and cayenne (if using) until it forms a slightly wet, sandy mixture.
  5. Coat each wrapped smokie generously with the brown sugar mixture, pressing it onto the bacon.
  6. Bake for 25-30 minutes, until bacon is crispy and sugar is caramelized. Check at 15 minutes; tent with foil if browning too quickly.
  7. Let rest for 5 minutes before serving. For extra crispiness, broil for 1-2 minutes at the end, watching carefully.
