  • 8 ounces block sharp cheddar cheese, freshly grated
  • 4 ounces Monterey Jack cheese, freshly grated
  • 1/4 teaspoon cumin
  • Pinch of cayenne pepper (optional)
  • 1 large bag (about 13 ounces) restaurant-style tortilla chips
  • 1 can (15 ounces) black beans, drained and rinsed (optional)
  • 1 cup fresh pico de gallo or salsa
  • 1 cup sour cream
  • 1 cup guacamole
  • 1/2 cup pickled jalapeรฑos, drained
  • 1/2 cup fresh cilantro, roughly chopped
  • 1 lime, cut into wedges

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. Cook the ground beef: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 2-3 minutes until it starts to soften. Add the ground beef, breaking it up with a wooden spoon. Cook for 5-7 minutes until browned and no longer pink. Drain off excess fat if there’s more than a tablespoon or two.
  3. Season the meat: Reduce heat to medium. Add the minced garlic, chili powder, cumin, smoked paprika, salt, and pepper. Stir together and cook for 1 minute until fragrant. Pour in the 1/4 cup water or beef broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes until the liquid mostly evaporates. Set aside.
  4. Make the queso: In a medium saucepan, melt 2 tablespoons butter over medium heat. Whisk in 2 tablespoons flour and cook for 1 minute, stirring constantly. Slowly pour in the milk while whisking to prevent lumps. Keep whisking until the mixture thickens, about 2-3 minutes.
  5. Add the cheese: Reduce heat to low. Add the shredded cheddar and Monterey Jack cheese a handful at a time, whisking until each addition is fully melted before adding more. Stir in the cumin and cayenne. If the queso seems too thick, add a splash more milk. Remove from heat and cover to keep warm.
  6. Layer the chips: Spread half the tortilla chips in an even layer on your baking sheet. Sprinkle half the black beans (if using) over the chips, then half the seasoned ground beef. Drizzle about half the queso over everything. Repeat with the remaining chips, beans, beef, and queso.
  7. Bake the nachos: Place the baking sheet in the preheated oven and bake for 8-10 minutes, just until the cheese is bubbly and the edges of the chips start to turn golden.
  8. Add fresh toppings: Remove from the oven and immediately top with dollops of sour cream, spoonfuls of guacamole, and scattered pico de gallo. Sprinkle pickled jalapeรฑos and fresh cilantro over the top. Squeeze a few lime wedges over everything.
