A refreshing and kid-approved salad that combines sweet watermelon, salty feta, and fresh mint in a simple 10-minute recipe. Perfect for summer barbecues, potlucks, or a light lunch.

  • 4 cups cubed seedless watermelon (from a small watermelon)
  • 1 cup crumbled feta cheese (about 150g, preferably from a block)
  • 1/4 cup chopped fresh mint (about 1012 leaves)
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1 tablespoon extra virgin olive oil
  • 1 small pinch salt

Instructions

  1. Prep the watermelon: Cut the watermelon in half crosswise, then slice each half into 1-inch thick rounds. Cut off the rind from each round, then cut the flesh into 1-inch cubes. Place the cubes in a large mixing bowl.
  2. Sprinkle with salt: Add a small pinch of salt to the watermelon cubes and toss gently. Let it sit for 2-3 minutes.
  3. Crumble the feta: While the watermelon rests, crumble the block of feta with your fingers or a fork into irregular pieces. Aim for about 1 cup total. Add to the bowl.
  4. Chop the mint: Stack the mint leaves, roll them into a tight cylinder, and slice crosswise into thin ribbons (chiffonade). Add to the bowl.
  5. Make the dressing: In a small bowl or measuring cup, whisk together the lime juice and olive oil.
  6. Toss and serve: Pour the dressing over the watermelon, feta, and mint. Toss gently until evenly coated. Serve immediately.

Notes

For best results, serve within 30 minutes of making. If the salad becomes watery after sitting, drain off excess liquid before serving. Use block feta instead of pre-crumbled for better flavor and texture. A tiny pinch of salt on the watermelon enhances its sweetness.
