  • ½ cup cornichons or baby pickles
  • ½ cup pitted green or kalamata olives
  • 2025 crackers or crostini (water crackers and rosemary crostini recommended)
  • 23 sprigs fresh rosemary for garnish

Instructions

  1. Prepare your base: Place your cutting board or platter on a flat surface. Visualize a football shape—roughly an oval with slightly pointed ends. You’ll be filling this space entirely.
  2. Layer the salami foundation: Fold each salami slice in half, then in half again to form a small triangle or fan shape. Arrange these folded slices in a slightly overlapping pattern along the center of your board, creating a thick ‘spine’ for the football. Use about half the salami for this layer.
  3. Add the pepperoni stripes: Lay pepperoni slices in two or three lines running perpendicular to the salami spine, like the stripes on a football. Space them evenly, about 2 inches apart.
  4. Place the cheese cubes: Arrange the cheddar cubes in clusters on either side of the salami spine. Place the gouda slices in small piles near the ends of the football. Tuck the brie wedges into the corners.
  5. Scatter the prosciutto: Drape the prosciutto slices loosely in small, ruffled piles near the edges of the board.
