  • ¾ cup (170g) unsalted butter, softened to room temperature
  • 1 ½ cups (300g) granulated sugar
  • 3 large eggs, room temperature
  • 1 tablespoon pure vanilla extract
  • 1 cup (240ml) buttermilk, room temperature
  • ½ cup (80g) rainbow sprinkles (jimmies)
  • 1 cup (226g) unsalted butter, softened (for frosting)
  • 4 cups (480g) powdered sugar, sifted (for frosting)
  • 3 tablespoons heavy cream (for frosting)
  • 2 teaspoons pure vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • Extra sprinkles for decorating

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans, line bottoms with parchment paper, grease parchment, and dust with flour.
  2. In a large bowl, whisk together flour, baking powder, and salt for 30 seconds to aerate.
  3. In another large bowl, beat softened butter and sugar with an electric mixer on medium speed until light and fluffy, about 3-4 minutes. Scrape down sides.
  4. Add eggs one at a time, beating well after each. Add vanilla and beat until combined.
  5. With mixer on low, add one-third of flour mixture, mixing until just combined. Add half the buttermilk, mix. Repeat with another third of flour, remaining buttermilk, and final flour. Stop mixing when flour disappears.
  6. Toss sprinkles with 1 tablespoon flour, then gently fold into batter with a rubber spatula.
  7. Divide batter evenly between prepared pans (about 650g each). Smooth tops. Bake 25-30 minutes, rotating pans halfway, until toothpick inserted in center comes out clean or with moist crumbs.
  8. Cool in pans 10 minutes, then run a knife around edges and invert onto wire rack. Remove parchment and cool completely (at least 1-2 hours).
  9. For frosting: Beat softened butter on medium speed until smooth, about 2 minutes. Gradually add sifted powdered sugar, one cup at a time, on low speed. Add heavy cream and vanilla, then beat on medium-high 3-4 minutes until light and fluffy. Add salt and beat 1 more minute.
  10. Place one cake layer on serving plate. Spread about ¾ cup frosting on top. Add second layer. Apply thin crumb coat, refrigerate 20 minutes, then apply final frosting layer. Decorate with extra sprinkles.

Notes

Room temperature ingredients are crucial for proper emulsification. Use jimmies (rod-shaped sprinkles) to prevent color bleeding. Toss sprinkles in flour before folding in. Do not overmix batter. Rotate pans halfway through baking. Check for doneness at 25 minutes. Cool cakes completely before frosting.
