Instructions

  1. Activate the yeast: In a small bowl, combine warm water and sugar. Sprinkle the yeast on top and let it sit for 5 minutes until foamy.
  2. Make the dough: In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Stir until a shaggy dough forms. Turn out onto a floured surface and knead for about 8 minutes until smooth and elastic.
  3. First rise: Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm spot for 30 minutes until doubled in size.
  4. Prepare the filling: While the dough rises, mix shredded chicken with Buffalo sauce. In another bowl, beat softened cream cheese until smooth. Combine cream cheese with Buffalo chicken mixture. Add both shredded cheeses, blue cheese (if using), and green onions. Mix well. Season with salt and pepper.
  5. Assemble the bread: Preheat oven to 375°F (190°C). Punch down risen dough and roll out on a floured surface into a 12×16 inch rectangle.
