  • 2 tablespoons pure maple syrup (Grade A dark amber preferred)
  • 1 teaspoon ground cinnamon

  • ½ teaspoon fine sea salt
  • ½ teaspoon vanilla extract (optional)
  • ¼ teaspoon nutmeg, freshly grated (optional)
  • 1 tablespoon brown sugar (optional)

Instructions

  1. Prepare your pumpkin seeds: After carving your pumpkin, separate the seeds from the biggest chunks of pulp. Don’t rinse them! Just pull off any large stringy pieces.
  2. Preheat your air fryer to 325°F (163°C). Let it preheat while you prepare the coating.
  3. Mix the coating: In a mixing bowl, combine the maple syrup, melted coconut oil, ground cinnamon, and salt. Whisk until smooth.
  4. Coat the seeds: Add the unrinsed pumpkin seeds to the bowl with the coating mixture. Stir until every seed is evenly coated.
  5. Arrange in the air fryer basket: Spread the coated seeds in a single layer in your air fryer basket. Don’t overcrowd them!
  6. Cook the seeds: Air fry at 325°F for 12-15 minutes. At the 6-minute mark, pause the air fryer and shake the basket or stir the seeds with a spatula. Cook until golden brown and fragrant.
  7. Cool completely: Transfer the cooked seeds to a plate or baking sheet in a single layer. Let them cool completely before eating or storing.
  8. Optional: While the seeds are still warm, sprinkle a little extra flaky sea salt on top.

Notes

Don’t rinse the pumpkin seeds! The thin layer of pumpkin flesh helps the coating stick. Shake the basket halfway through cooking for even results. Let seeds cool completely before eating to achieve maximum crunchiness. For a spicy version, add ¼ teaspoon cayenne pepper. For a savory version, skip the maple syrup and cinnamon and use olive oil, garlic powder, dried rosemary, and salt.
