  • 5–6 pounds bone-in pork shoulder (pork butt)
  • 2 tablespoons olive oil
  • 1 can (12 ounces) root beer (not diet)
  • 1/2 cup apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon liquid smoke (optional)
  • 2 cups of your favorite store-bought BBQ sauce
  • 1/4 cup apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 teaspoon Worcestershire sauce
  • 12–16 soft hamburger buns or brioche buns
  • Coleslaw (for topping, optional)
  • Pickle slices
  • Extra BBQ sauce

Instructions

  1. Prep the Pork: Take the pork shoulder out of the fridge about 30 minutes before starting. Pat it completely dry with paper towels. In a small bowl, combine all the dry rub ingredients. Generously coat the entire pork shoulder with the rub, pressing it into all the nooks and crannies.
  2. Sear the Pork: Heat the olive oil in a large skillet over medium-high heat until it shimmers. Carefully place the seasoned pork shoulder in the hot skillet. Sear for 3-4 minutes per side, without moving it, until a deep brown crust forms on all sides.
  3. Assemble in the Slow Cooker: Place the seared pork shoulder into the slow cooker, fat cap side up. In a measuring cup, whisk together the root beer, apple cider vinegar, Worcestershire sauce, and liquid smoke (if using). Pour this mixture around the pork, not directly over the top.
  4. Cook Low and Slow: Cover the slow cooker with the lid. Cook on LOW for 8-10 hours, or on HIGH for 5-6 hours, until the pork is fork-tender.
  5. Make the BBQ Sauce: While the pork cooks, combine the BBQ sauce, apple cider vinegar, brown sugar, and Worcestershire sauce in a small saucepan. Warm over low heat, stirring occasionally, until the sugar dissolves and the sauce is smooth. Set aside.
  6. Shred the Pork: Once the pork is cooked, carefully transfer it to a large cutting board or rimmed baking sheet. Let it rest for 5-10 minutes. Using two forks or meat claws, shred the pork into bite-sized pieces. Discard any large pieces of fat or the bone.
  7. Combine and Finish: Return the shredded pork to the slow cooker. Pour about 1 cup of the prepared BBQ sauce over the pork and toss to coat. Add more sauce to your liking. Let the pork sit in the sauce on the ‘Keep Warm’ setting for 15-20 minutes to absorb the flavors.
  8. Toast the Buns: Just before serving, split the buns and toast them lightly under the broiler or on a griddle. Pile the pulled pork high on each bun, top with coleslaw and pickles if desired, and serve with extra BBQ sauce on the side.
