  • 1 can (14 ounces) sweetened condensed milk
  • 1/4 cup bourbon
  • 2 ripe peaches, diced (about 1 cup)
  • 2 tablespoons brown sugar
  • 1 tablespoon bourbon (for macerating peaches)
  • Pinch of salt

Instructions

  1. Macrate the peaches: Dice peaches into small cubes. Toss with brown sugar, 1 tablespoon bourbon, and a pinch of salt. Let sit for at least 30 minutes at room temperature.
  2. Cook the peaches: Transfer peaches and juices to a small saucepan. Cook over medium heat for 3-5 minutes until liquid thickens and peaches soften. Let cool completely.
  3. Whip the cream: In a large chilled bowl, whip heavy cream on medium-high speed until stiff peaks form (3-5 minutes).
  4. Fold in condensed milk and bourbon: In a small bowl, whisk together sweetened condensed milk and remaining 1/4 cup bourbon. Gently fold into whipped cream until smooth and uniform.
  5. Layer and swirl: Line a 9×5-inch loaf pan with parchment paper. Layer one-third of cream mixture, half of peach mixture, and swirl. Repeat with another third of cream and remaining peaches. Top with final third of cream.
  6. Freeze: Cover pan tightly and freeze for at least 6 hours or overnight.
  7. Serve: Let sit at room temperature for 5 minutes before scooping. Lift out using parchment overhang if desired.

Don’t skip the bourbon—it prevents ice crystals and keeps the texture creamy. Chill your bowl and beaters for best whipping results. Let peaches cool completely before adding to cream.
