  • 1/2 cup sour cream (120 ml)
  • 1/2 cup buttermilk or whole milk (120 ml)
  • 2 large eggs, room temperature
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • For the Frosting:
  • 1/2 cup unsalted butter (115 g)
  • 1/4 cup unsweetened cocoa powder (20 g)
  • 6 tablespoons milk (90 ml), whole milk preferred
  • 1 teaspoon vanilla extract
  • 3 1/2 cups powdered sugar (420 g), sifted

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 13×9 inch baking pan with butter or non-stick spray.
  2. In a medium bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  3. Bring 1 cup boiling water to a boil in a small saucepan. Pour over dry ingredients and stir until combined; batter will be thin and glossy.
  4. Add melted butter, sour cream, buttermilk, eggs, and vanilla extract to the batter. Mix gently until smooth and fully incorporated.
  5. Pour batter into prepared pan and spread evenly.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Edges should pull away slightly from the pan.
  7. While cake bakes, prepare frosting: melt butter in a small saucepan over medium heat. Whisk in cocoa powder until smooth. Remove from heat and stir in milk and vanilla extract. Gradually add powdered sugar, whisking until smooth and glossy.
  8. Immediately pour hot frosting evenly over warm cake and spread to edges with a spatula.
  9. Let cake cool completely at room temperature for at least 1 hour before cutting.
