  • 2 1/2 cups (600ml) whole milk, warmed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, and salt. Add cold, cubed butter.
  3. Cut in the butter using a pastry cutter or two forks until mixture resembles coarse crumbs.
  4. Pour in cold whole milk and stir gently until just combined; dough will be sticky.
  5. Turn dough onto a floured surface and pat into a 1-inch thick rectangle. Fold over and pat again two times.
  6. Cut biscuits using a 2.5-inch round cutter and place close together on the baking sheet.
  7. Bake biscuits for 12-15 minutes or until golden brown.
  8. While biscuits bake, brown sausage in a large skillet over medium heat, breaking into small pieces, about 8 minutes.
  9. Remove excess grease from skillet, leaving about 3 tablespoons.
  10. Add butter to skillet and melt over medium heat.
  11. Sprinkle flour evenly over sausage and butter mixture; stir constantly for 2-3 minutes.
  12. Gradually whisk in warm whole milk, stirring to avoid lumps; gravy thickens in about 5 minutes.
  13. Season gravy with salt, black pepper, garlic powder, and red pepper flakes if using; adjust seasoning to taste.
  14. Simmer gravy gently for 5-7 minutes, stirring occasionally until creamy. Add more milk if too thick.
  15. Serve hot by splitting warm biscuits and ladling sausage gravy generously on top.
