Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water, brown sugar, and active dry yeast. Stir gently and let sit for 5-7 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 3 cups of flour to the yeast mixture. Stir until a shaggy dough forms. Gradually add remaining ยฝ cup flour until dough pulls away from bowl sides.
  3. Knead the dough: Turn onto a lightly floured surface and knead for 5-6 minutes until smooth and elastic.
  4. First rise: Place dough in a lightly oiled bowl, cover with a kitchen towel, and let rise in a warm spot for 30 minutes until doubled in size.
  5. Prepare the boiling bath: Bring 10 cups of water to a rolling boil in a large pot. Preheat oven to 425ยฐF and line a baking sheet with parchment paper. Carefully add baking soda to boiling water.
  6. Shape the bites: Punch down dough and divide into 4 equal pieces. Roll each into a 12-inch rope, then cut into 1-inch pieces.
