  • 1 cup buttermilk, cold
  • 2 tablespoons granulated sugar

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large bowl, combine sliced peaches, bourbon, sugar, cornstarch, vanilla extract, cinnamon, and a pinch of salt. Toss gently to coat evenly.
  3. Transfer the peach mixture to the prepared baking dish, spreading it out evenly.
  4. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
  5. Add the cold, cubed butter and use a pastry cutter or forks to cut it into the dry ingredients until the mixture resembles coarse crumbs with pea-sized bits of butter.
  6. Slowly pour in the cold buttermilk and gently stir with a wooden spoon just until the dough comes together. Do not overmix.
  7. Drop spoonfuls of biscuit dough evenly over the peach filling, allowing gaps for the dough to spread as it bakes.
  8. Bake in the preheated oven for 35-40 minutes, until the biscuit topping is golden brown and the peach filling is bubbly.
