Ingredients

Scale
  • 6 cups (about 67 medium) apples, peeled, cored, and sliced (mix of Granny Smith and Honeycrisp)
  • 1/4 cup (50g) granulated sugar
  • 2 tablespoons (15g) all-purpose flour
  • 1 tablespoon (15ml) fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 1/2 cup (113g) unsalted butter
  • 1 cup (90g) old-fashioned rolled oats
  • 1/2 cup (60g) all-purpose flour
  • 1/2 cup (100g) packed brown sugar (light or dark)
  • 1/4 cup (50g) granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Make the brown butter: Place 1/2 cup unsalted butter in a medium saucepan over medium heat. Melt completely, then continue cooking, swirling occasionally, until it turns golden-amber and smells nutty (about 5-7 minutes). Remove from heat and pour into a heat-safe bowl to stop cooking.
  3. Prep the apples: Peel, core, and slice apples into 1/4-inch thick slices. Toss in a large bowl with granulated sugar, flour, lemon juice, cinnamon, nutmeg, and a pinch of salt until coated.
  4. Make the oat crumble: In a medium bowl, whisk together rolled oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Pour the slightly cooled brown butter over the dry ingredients and stir with a fork until moistened and clumpy.
  5. Assemble the crisp: Pour apple mixture into an ungreased 8×8 or 9×9 baking dish. Sprinkle oat crumble evenly over the top without pressing down.
  6. Bake: Place dish on a baking sheet and bake for 40-45 minutes, until filling is bubbly and topping is golden brown. If topping browns too quickly, tent with foil after 30 minutes.
  7. Cool and serve: Let cool on a wire rack for at least 15-20 minutes before serving. Serve warm with vanilla ice cream or heavy cream.

Notes

Don’t rush the brown butter; use medium heat and watch for golden-amber color and nutty aroma. Use a mix of tart and sweet apples for best flavor. Let the crisp rest for 15-20 minutes before serving to allow the filling to set. For a gluten-free version, use a 1-to-1 gluten-free baking flour blend. For a vegan version, use high-quality vegan butter like Miyoko’s.
