  • 2 medium delicata squash (about 2 lbs total)
  • 2 tablespoons olive oil
  • ยฝ teaspoon fine sea salt
  • ยผ teaspoon freshly ground black pepper
  • 4 tablespoons unsalted butter
  • 1 medium yellow onion, chopped (about 1 cup)
  • 2 cloves garlic, minced
  • ยฝ teaspoon dried sage (or 1 teaspoon fresh, chopped)
  • ยผ teaspoon ground nutmeg
  • ยผ teaspoon cayenne pepper (optional)
  • 3 cups low-sodium vegetable broth
  • ยฝ cup full-fat coconut milk
  • 1 tablespoon pure maple syrup
  • Salt and pepper to taste
  • For Garnish (Optional): Extra drizzle of coconut milk or heavy cream, a few fresh sage leaves fried in butter until crispy, toasted pumpkin seeds or pepitas, a swirl of brown butter

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). Wash the delicata squash thoroughly. Cut each squash in half lengthwise and scoop out the seeds. Slice the squash halves into ยฝ-inch thick half-moons. Toss them on a rimmed baking sheet with the olive oil, salt, and pepper. Spread in a single layer. Roast for 20-25 minutes, flipping halfway through, until tender and golden brown at the edges.
  2. While the squash roasts, place a large pot or Dutch oven over medium heat. Add the 4 tablespoons of butter. Let it melt completely, then continue cooking. It will foam and sputter. Swirl the pan occasionally. After about 4-5 minutes, when the milk solids at the bottom turn golden-brown and it smells nutty, remove from heat immediately.
  3. Add the chopped onion to the pot with the brown butter. Return to medium-low heat and sautรฉ for 5-7 minutes until soft and translucent. Add the minced garlic, dried sage, nutmeg, and cayenne (if using). Cook for another minute until fragrant.
  4. Add the roasted squash to the pot. Pour in the vegetable broth, coconut milk, and maple syrup. Stir together. Bring to a gentle simmer over medium heat, then reduce heat to low. Let simmer for about 10 minutes to meld flavors.
  5. Remove the pot from heat. Using an immersion blender, blend the soup directly in the pot until completely smooth and velvety. If using a countertop blender, let cool for 5 minutes, then blend in batches, being careful with hot liquid.
  6. Taste the soup and adjust seasoning with more salt, pepper, nutmeg, or maple syrup as needed. If too thick, thin with extra broth or water.
  7. Ladle into bowls. Garnish with a swirl of extra coconut milk, crispy fried sage leaves, toasted pumpkin seeds, or a spoonful of reserved brown butter. Serve immediately with crusty bread.

Notes

Don’t rush the brown butterโ€”watch it closely as it can burn quickly. Roasting the squash concentrates its sweetness. Use full-fat coconut milk for the creamiest texture.
