Cozy Champurrado – Best Mexican Chocolate Atole Recipe

champurrado recipe - featured image

This champurrado is a thick, warm, cinnamon-spiced Mexican chocolate atole that’s like a hug in a mug. Made with simple ingredients like piloncillo and masa harina, it’s a budget-friendly, comforting drink perfect for cold mornings and holiday gatherings.

Ingredients

Scale
  • 4 cups whole milk (or 2 cups milk + 2 cups water for a lighter version)
  • 1 cone piloncillo (about 7–8 ounces) or ¾ cup packed dark brown sugar
  • ¼ cup masa harina (Maseca brand recommended)
  • 1 cup cold water
  • 1 cinnamon stick (Mexican canela preferred)
  • ½ teaspoon vanilla extract (pure vanilla recommended)
  • Pinch of salt
  • 2 tablespoons unsweetened cocoa powder (optional, for deeper chocolate flavor)
  • ½ cup heavy cream (optional, for extra richness)
  • 1 tablespoon orange zest (optional)
  • 1 star anise (optional)

Instructions

  1. Prepare the masa slurry: In a small bowl, whisk together ¼ cup masa harina and 1 cup cold water until completely smooth. Set aside.
  2. Heat the milk and piloncillo: Pour 4 cups whole milk into a medium saucepan. Add the piloncillo cone and cinnamon stick. Heat over medium, stirring occasionally, until the piloncillo starts to dissolve, about 5-7 minutes.
  3. Add the masa slurry: Once the piloncillo has mostly dissolved, give the masa slurry a quick whisk, then pour it into the milk while stirring constantly with a whisk.
  4. Simmer and thicken: Reduce heat to low and let the champurrado simmer gently for 10-15 minutes, stirring every few minutes, until it thickens to a creamy, pudding-like consistency and coats the back of a spoon.
  5. Remove the cinnamon stick: Fish out the cinnamon stick (and star anise if used) with a spoon or tongs. Give the champurrado a final whisk.
  6. Blend for extra smoothness (optional): Use an immersion blender in the pot for 30 seconds, or carefully transfer to a regular blender and blend until smooth. Be careful with hot liquid.
  7. Add vanilla and salt: Stir in ½ teaspoon vanilla extract and a pinch of salt. Taste and adjust sweetness. If desired, whisk in 2 tablespoons unsweetened cocoa powder.
  8. Serve immediately: Pour into mugs and serve hot. The champurrado will continue to thicken as it cools.

Notes

Don’t skip mixing masa harina with cold water first to avoid lumps. Keep heat low and slow to prevent scorching. Scrape the bottom of the pot while stirring to prevent burning. The champurrado will thicken as it cools. For dairy-free, use oat milk or canned coconut milk. Leftovers can be stored in the refrigerator for up to 5 days and reheated gently.
