  • 3 tablespoons honey
  • 4 cloves garlic, minced

  • 2 tablespoons fresh lime juice

  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • Wooden or metal skewers
  • Fresh parsley or cilantro for garnish (optional)

Instructions

  1. Make the marinade: In a medium mixing bowl, whisk together honey, minced garlic, soy sauce, lime juice, olive oil, salt, and pepper. Add red pepper flakes if using. Taste and adjust sweetness or saltiness as needed.
  2. Prep the shrimp: If not already peeled and deveined, do so now. Pat shrimp dry with paper towels. Place shrimp in the bowl with marinade and toss gently to coat. Do not marinate for more than 15 minutes.
  3. Thread the skewers: If using wooden skewers, soak them in water for at least 30 minutes. Thread 4-5 shrimp onto each skewer, leaving a little space between each.
  4. Preheat the grill: Heat grill to medium-high heat (400°F to 450°F). Clean grates and oil lightly.
  5. Grill the skewers: Place skewers on the grill. Cook for 2-3 minutes on the first side until edges turn pink and caramelized spots form. Flip carefully and cook for another 2-3 minutes until shrimp are opaque and slightly firm.
  6. Rest and garnish: Transfer skewers to a serving platter. Let rest for 1-2 minutes. Sprinkle with fresh parsley or cilantro if desired. Serve immediately.

Notes

Do not marinate shrimp for more than 15 minutes to avoid a mealy texture. For extra sauce, make a separate batch of marinade that doesn’t touch raw shrimp. If using wooden skewers, soak them for at least 30 minutes to prevent burning. Shrimp is done when opaque and curled into a loose ‘C’ shape.
