These creamy, naturally sweetened overnight oats combine ripe banana and peanut butter for a comforting breakfast that comes together in just five minutes of prep. Perfect for busy mornings, this recipe is a crowd-pleaser that tastes like dessert but is packed with fiber and protein.

Ingredients

Scale
  • ½ cup (40g) rolled oats
  • 1 medium ripe banana (the spottier the better)
  • 1½ tablespoons (24g) creamy peanut butter
  • ⅔ cup (160ml) milk of choice (whole, oat, almond, or 2%)
  • 1 tablespoon (15ml) maple syrup (optional, adjust to taste)
  • 1 tablespoon (12g) chia seeds
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: sliced banana, drizzle of peanut butter, dark chocolate chips, chopped peanuts, cinnamon, cocoa powder, Greek yogurt

Instructions

  1. Mash the banana: Peel the banana and place it in the bottom of a 16-ounce mason jar or airtight container. Use a fork to mash until mostly smooth with a few small lumps remaining.
  2. Add wet ingredients: Pour in the milk, peanut butter, maple syrup, and vanilla extract. Stir with the fork until the peanut butter is mostly incorporated.
  3. Add dry ingredients: Sprinkle in the rolled oats, chia seeds, and a pinch of salt. Stir thoroughly until everything is combined and no dry pockets remain.
  4. Taste and adjust: Dip a clean spoon in and taste the mixture. Add more maple syrup if needed or an extra teaspoon of peanut butter if desired.
  5. Seal and refrigerate: Put the lid on the jar and refrigerate for at least 6 hours, preferably overnight.
  6. Serve the next morning: Stir the oats. If too thick, add a tablespoon or two of milk. Add desired toppings and enjoy cold or let sit at room temperature for 10 minutes.

Notes

Do not skip the chia seeds—they are essential for the pudding-like texture. For meal prep, make each jar individually rather than mixing a big batch. The banana flavor intensifies over time; day 3 is the sweet spot. If you prefer warm oats, transfer to a saucepan and heat gently for 2-3 minutes with a splash of milk.
