Ingredients

Scale
  • 6 medium apples, mixed varieties (3 Granny Smith and 3 Honeycrisp), peeled, cored, and sliced into ¼-inch thick pieces
  • ¼ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • ½ teaspoon vanilla extract
  • 1 cup old-fashioned rolled oats
  • ¾ cup all-purpose flour
  • ½ cup packed light brown sugar
  • ¼ cup granulated sugar
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cut into small cubes
  • ½ teaspoon ground cinnamon
  • ½ cup store-bought caramel sauce
  • ¼ teaspoon flaky sea salt
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep the apples: Peel, core, and slice your apples into even ¼-inch thick pieces. Mix together the granulated sugar, flour, cinnamon, nutmeg, and vanilla in a small bowl, then toss with the apples until every piece is coated. Let this sit while you make the streusel.
  3. Make the streusel: In a large bowl, whisk together the oats, flour, brown sugar, granulated sugar, salt, and cinnamon. Add the cold butter cubes. Use a pastry cutter, two forks, or your fingertips to work the butter into the dry ingredients until the mixture is crumbly with pea-sized pieces of butter still visible. Do not overwork.
  4. Prepare the caramel: In a small bowl, stir together the caramel sauce, flaky sea salt, and flour.
  5. Assemble the crisp: Spread the apple mixture evenly in a greased 9×13-inch baking dish. Sprinkle the streusel over the top in an even layer. Drizzle the salted caramel mixture over the streusel.
  6. Bake: Place the dish on a baking sheet to catch any drips. Bake for 40-45 minutes, until the streusel is golden brown and the apples are bubbling around the edges. If the streusel is browning too quickly, tent loosely with foil for the last 10 minutes.
  7. Rest: Let the crisp cool for at least 15 minutes before serving.

Notes

Use cold butter for the streusel to ensure a crispy topping. Let the crisp rest for at least 15 minutes after baking to allow the filling to set. For a gluten-free version, use a 1:1 gluten-free baking blend. For a vegan adaptation, use plant-based butter and vegan caramel sauce.
