  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • Extra salted caramel sauce for drizzling
  • Vanilla ice cream or whipped cream for serving
  • Flaky sea salt for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Butter a 9×13-inch baking dish lightly.
  2. Make the streusel: In a large bowl, whisk together oats, flour, brown sugar, cinnamon, and salt. Add cold butter cubes and work into the dry ingredients using a pastry cutter or fingertips until the mixture resembles coarse crumbs with some pea-sized butter bits. Refrigerate while prepping apples.
  3. Prep the apples: Peel, core, and slice apples into 1/4-inch thick pieces. Toss in a medium bowl with granulated sugar, flour, cinnamon, nutmeg, and lemon juice. Let sit for 5 minutes.
  4. Layer the filling: Spread the apple mixture evenly in the prepared baking dish. Drizzle salted caramel sauce over the top without stirring.
  5. Add the streusel: Remove streusel from fridge and sprinkle evenly over the apples, covering them completely. Do not press down.
  6. Bake: Place dish on a baking sheet and bake for 40-45 minutes, until streusel is golden brown and filling is bubbly around the edges. If topping browns too quickly, tent with foil for the last 10 minutes.
  7. Cool slightly: Let crisp sit on a wire rack for at least 10 minutes to allow filling to set.
  8. Serve warm: Scoop into bowls, top with vanilla ice cream, extra caramel drizzle, and a pinch of flaky sea salt.

Notes

For gluten-free, use a 1:1 gluten-free flour blend and certified gluten-free oats. For dairy-free, use cold coconut oil or vegan butter. Let the caramel cool slightly before drizzling to prevent it from sinking. Use a mix of apple varieties for best texture and flavor.
