  • 2 pounds boneless, skinless chicken breasts or thighs
  • 3 medium carrots, peeled and sliced
  • 3 celery stalks, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 2 teaspoons dried thyme
  • 1 teaspoon dried parsley or 1 tablespoon fresh parsley, chopped
  • 1 bay leaf
  • 6 ounces egg noodles (use gluten-free pasta if needed)
  • Salt and freshly ground black pepper, to taste
  • Optional: 1 tablespoon fresh lemon juice
  • Optional: fresh parsley for garnish

Instructions

  1. Chop the carrots, celery, and onion; mince garlic. Trim excess fat from chicken if needed and pat dry.
  2. Place chicken breasts or thighs at the bottom of the slow cooker. Add chopped vegetables and garlic on top.
  3. Pour in the chicken broth. Sprinkle thyme, parsley, and add the bay leaf. Season lightly with salt and pepper.
  4. Cover and set the slow cooker to low. Cook for 4-5 hours until chicken is tender.
  5. Remove the chicken pieces and shred them using two forks.
  6. Return shredded chicken to the slow cooker. Add egg noodles and stir gently to combine. Cover and cook for an additional 30 minutes until noodles are tender but not mushy.
  7. Remove bay leaf. Taste and adjust salt, pepper, and stir in fresh lemon juice if using.
  8. Ladle the soup into bowls, garnish with fresh parsley if desired, and serve warm.

Notes

Add noodles only in the last 30 minutes to prevent mushiness. Use bone-in chicken thighs for richer broth, removing bones before shredding. Adjust salt at the end to avoid oversalting. If soup thickens after sitting, stir in broth or hot water before reheating. For gluten-free version, swap noodles for gluten-free pasta or rice noodles. Spiralized zucchini can be used as a low-carb noodle alternative added in the last 15 minutes.
