  • Icing packets from the cinnamon roll cans

Instructions

  1. Prep the Night Before: Spray the slow cooker insert generously with non-stick spray. Open both cans of cinnamon rolls and set the icing packets aside. Cut each cinnamon roll into quarters. Place the quartered pieces evenly in the bottom of the slow cooker.
  2. Make the Custard: In a large bowl, whisk together the eggs, heavy cream, vanilla extract, and ground cinnamon until smooth and well combined. Pour this mixture evenly over the cinnamon roll pieces, making sure every piece is coated. Gently toss with a spatula.
  3. Add the Butter and Brown Sugar: Drizzle the melted butter over the top, then sprinkle the brown sugar evenly. If using nuts, add them now. Give everything one more gentle stir.
  4. The Overnight Soak: Cover the slow cooker and place it in the refrigerator overnight (at least 8 hours, up to 12).
  5. Christmas Morning Cooking: In the morning, take the slow cooker out of the fridge and let it sit on the counter for about 15 minutes. Place it in the slow cooker base, cover, and cook on LOW for 2.5 to 3 hours. The casserole is ready when the center is set and no longer jiggly, and the edges are golden brown and bubbly.
  6. Add the Icing: Turn off the slow cooker and let it sit, uncovered, for about 10 minutes. Then, squeeze the reserved icing packets over the top in a zigzag pattern.
