  • 1 cup (200g) granulated sugar
  • 1 cup (200g) packed brown sugar (light or dark)
  • 2 tablespoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla extract
  • 2 tablespoons lemon juice

Instructions

  1. Prep the Apples: Peel, core, and slice apples into roughly 1-inch chunks (about 12-14 cups).
  2. Combine in Slow Cooker: Place sliced apples in slow cooker. Add granulated sugar, brown sugar, cinnamon, nutmeg, cloves, and salt. Pour lemon juice over top. Stir until apples are well coated.
  3. Cook on Low: Cover and cook on LOW for 10-12 hours. Stir after about 4 hours to ensure sugar dissolves evenly.
  4. Check for Doneness: After 10 hours, apples should be very soft and dark. If still watery, cook another 1-2 hours. Mixture should be reduced by about half.
  5. Blend Until Smooth: Turn off slow cooker and let cool for 10 minutes. Use an immersion blender to blend until smooth. If using a regular blender, work in batches and be careful with hot liquid.
  6. Add Vanilla: Stir in vanilla extract.
  7. Thicken (Optional): If too thin, return slow cooker to HIGH and cook uncovered for 30-60 minutes, stirring occasionally.
  8. Cool and Jar: Let cool to room temperature. Spoon into sterilized mason jars, leaving 1/2 inch headspace. Seal and refrigerate.
