  • 1 ounce (2 tablespoons) spiced simple syrup (adjust to taste)
  • Ice cubes (optional)
  • Garnish: thin apple slices, cinnamon stick, or fresh rosemary sprig

Instructions

  1. Make the spiced simple syrup: In a small saucepan, combine sugar, water, cinnamon sticks, cloves, star anise, and ginger slice. Stir gently. Place over medium heat and bring to a gentle simmer. Do not let it boil rapidly.
  2. Simmer and infuse: Once sugar is dissolved and liquid is simmering, reduce heat to low. Cook for 10 minutes, stirring occasionally. Remove from heat and stir in vanilla extract.
  3. Strain and cool: Place a fine-mesh strainer over a glass measuring cup or bowl. Pour syrup through strainer to remove spices. Discard spices. Let syrup cool completely to room temperature (about 20-30 minutes).
  4. Chill ingredients: Ensure apple cider and sparkling wine are well-chilled before assembling.
  5. Assemble the mimosa: Pour 2 tablespoons (1 ounce) of cooled spiced simple syrup into a champagne flute. Adjust amount to taste.
  6. Add apple cider: Pour 4 ounces of chilled apple cider into the glass. Stir gently to combine.
  7. Top with sparkling wine: Slowly pour 4 ounces of chilled champagne or prosecco into the glass, pouring at an angle down the side to preserve bubbles.
  8. Garnish and serve: Add a thin slice of fresh apple to the rim, and optionally a cinnamon stick or rosemary sprig. Serve immediately.

Notes

The spiced simple syrup can be made up to 2 weeks in advance and stored in the refrigerator. For a non-alcoholic version, replace champagne with sparkling apple cider or sparkling water. Adjust spice level to taste. Use a dry sparkling wine to balance sweetness. Let syrup cool completely before using to preserve bubbles.
