Ingredients

Scale
  • 4 ounces aged gouda, sliced into thin wedges
  • 4 ounces brie, left whole or cut into wedges
  • 4 ounces goat cheese log, sliced into rounds
  • 4 ounces prosciutto, thinly sliced
  • 4 ounces spicy soppressata, sliced into thin rounds
  • 1/2 cup fig jam
  • 1/4 cup honey
  • 1/3 cup marcona almonds, roasted and salted
  • 1/3 cup dried apricots
  • 1/3 cup dark chocolate-covered almonds
  • 1 small baguette, sliced into thin rounds and lightly toasted
  • 1 cup mixed olives (castelvetrano and kalamata)
  • Fresh rosemary sprigs for garnish (optional)
  • A few fresh figs, halved (if in season, or use sliced apple)

Instructions

  1. Take your cheeses out of the fridge 30 minutes before serving.
  2. Toast the baguette slices: arrange on a baking sheet, brush lightly with olive oil, and toast at 375°F for 5-7 minutes until golden. Let cool completely.
  3. Place your ramekins first: put the fig jam, honey, and olives in small bowls and arrange them on the board in a triangle pattern.
  4. Add the cheeses: place the brie whole or in wedges in a prominent spot, fan out the gouda slices next to it, and place the goat cheese rounds in a small cluster.
  5. Layer in the meats: fold prosciutto into loose ribbons or shape into roses. Arrange soppressata slices in a slightly overlapping row.
  6. Fill in with accompaniments: scatter marcona almonds, dried apricots, and dark chocolate-covered almonds in small clusters around the board.
  7. Add the baguette slices and crackers: arrange them in a fan pattern or stack neatly in an empty corner.
  8. Garnish and serve: tuck fresh rosemary sprigs between the cheeses. If using fresh figs, place them cut-side up near the brie. Serve immediately.

Notes

For best texture, bring brie to room temperature before serving. Buy prosciutto sliced fresh from the deli counter. If fig jam is unavailable, use raspberry jam or apricot preserves. Marcona almonds are worth the splurge for their buttery texture. Don’t overcrowd the board; leave about an inch of space between clusters. Pre-slice hard cheeses for easy serving. Keep wet and dry ingredients separate using ramekins.
