This Creamy Bacon Cheddar Corn Dip in a Bread Bowl is quick, easy, and absolutely packed with flavor. The combination of smoky bacon, sweet corn, and melted cheddar in a warm, crusty bread bowl is pure magic.

  • 1 round loaf of sourdough or crusty bread (about 810 inches wide)
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 cup frozen or canned corn, drained
  • 6 slices of bacon, cooked and crumbled
  • 1/4 cup chopped green onions
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Cook bacon in a skillet over medium heat until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate to drain, then crumble into small pieces. Set aside about 2 tablespoons for garnish.
  2. Prepare the bread bowl. Using a serrated knife, cut a circle about 2 inches from the edge of the top of the bread loaf. Remove the top and set it aside. Gently pull out the soft bread from the inside, leaving a 1-inch thick wall all around. Tear the removed bread into bite-sized chunks for dipping.
  3. Toast the bread bowl. Place the hollowed bread loaf and the bread chunks on a baking sheet. Bake for 5 minutes to lightly toast the inside. Remove from the oven and set aside.
  4. Mix the dip. In a medium bowl, combine the softened cream cheese and sour cream. Stir until smooth and creamy. Add the shredded cheddar, corn, crumbled bacon (reserving the garnish), green onions, garlic powder, smoked paprika, and a pinch of salt and pepper. Mix until everything is evenly distributed. Taste and adjust seasoning if needed.
  5. Fill the bread bowl. Spoon the dip mixture into the toasted bread bowl, mounding it slightly on top. Place the reserved bread top back on if desired, or leave it off for a more exposed look.
  6. Bake. Place the filled bread bowl on the baking sheet. Bake for 12-15 minutes, or until the dip is hot and bubbly, and the cheese is melted. If the top starts browning too quickly, loosely tent it with foil.
  7. Garnish and serve. Remove from the oven. Sprinkle the reserved crumbled bacon and a few extra green onions on top. Serve immediately with the toasted bread chunks and any extra dippers like crackers or veggies.

Notes

For best results, use room temperature cream cheese. Toast the bread bowl for 5 minutes before adding the dip to prevent sogginess. Drain corn well to avoid watery dip. Cook bacon until extra crispy for better texture. Don’t overmix the dip once cheese is added. For a lighter version, use reduced-fat cream cheese, Greek yogurt instead of sour cream, and turkey bacon.
