A creamy, spicy buffalo chicken dip made effortlessly in the slow cooker, perfect for game days and casual get-togethers. This recipe combines shredded chicken, cream cheese, buffalo sauce, and cheeses for a crowd-pleasing, indulgent snack.

Ingredients

Scale
  • 3 cups shredded cooked chicken (about 450 grams)
  • 8 ounces cream cheese, softened (225 grams)
  • 3/4 cup buffalo wing sauce (180 ml)
  • 1/2 cup ranch dressing (120 ml)
  • 1 cup shredded cheddar cheese (100 grams)
  • 1/2 cup shredded mozzarella cheese (50 grams)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish
  • Optional: blue cheese crumbles
  • Optional: celery sticks or tortilla chips for dipping

Instructions

  1. If you don’t have pre-shredded chicken, cook chicken breasts or thighs in boiling water or bake at 375°F (190°C) for 20-25 minutes until fully cooked. Let cool slightly, then shred with two forks or a hand mixer for about 2 minutes.
  2. In a mixing bowl, combine softened cream cheese with buffalo wing sauce and ranch dressing. Mix until smooth and creamy, about 1-2 minutes.
  3. Add shredded chicken into the slow cooker. Pour the cream cheese mixture over the chicken. Sprinkle garlic powder, onion powder, salt, and pepper evenly on top.
  4. Stir gently to coat all the chicken with the creamy buffalo mixture.
  5. Cover the slow cooker and cook on low for 2 to 3 hours. Avoid lifting the lid too often.
  6. About 15 minutes before serving, sprinkle shredded cheddar and mozzarella cheese on top. Cover and let the cheese melt completely.
  7. Give the dip a good stir to combine the melted cheese with the rest. Garnish with chopped green onions or blue cheese crumbles if desired. Serve warm with tortilla chips, celery sticks, or crackers.

Notes

Use pre-cooked shredded chicken like rotisserie for convenience. Soften cream cheese at room temperature to avoid lumps. Cook on low heat for 2-3 hours to keep dip creamy. Add cheese topping near the end for a golden melt. If dip is too thick, add a splash of milk or ranch dressing. Keep slow cooker lid clean and dry to avoid moisture drips. Leftovers keep well refrigerated up to 4 days and freeze well.
