Creamy Marry Me Chicken with Sun-Dried Tomato Sauce

  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 700g), pounded to even thickness
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/3 cup packed sun-dried tomatoes, roughly chopped (oil-packed recommended)
  • 1 cup chicken broth (240ml), homemade or low-sodium store-bought
  • 1 cup heavy cream (240ml)
  • 1/2 cup grated Parmesan cheese (50g)
  • A small handful fresh basil, chopped (optional)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Pound 4 boneless skinless chicken breasts to about 1/2 inch (1.3 cm) thickness. Season both sides with salt and freshly cracked black pepper. Set aside. (Approx. 10 minutes)
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering. Add chicken breasts and cook undisturbed for 4-5 minutes per side, or until golden brown and cooked through (internal temp 165°F/74°C). Remove chicken to a plate and tent with foil to keep warm. (Approx. 10 minutes)
  3. Reduce heat to medium. Add minced garlic and chopped sun-dried tomatoes to the same skillet. Stir constantly for 1-2 minutes until fragrant but not burnt.
  4. Pour in 1 cup chicken broth, scraping up any browned bits from the pan bottom. Let it simmer for 3-4 minutes to reduce slightly and concentrate flavor.
  5. Lower heat to medium-low. Stir in 1 cup heavy cream and 1/2 cup grated Parmesan cheese. Stir gently until the cheese melts and the sauce thickens slightly, about 3-5 minutes. Add a pinch of red pepper flakes if using, and adjust salt and pepper to taste.
  6. Nestle the seared chicken breasts back into the sauce. Spoon sauce over the top and let everything warm through together for 2-3 minutes.
  7. Just before serving, sprinkle chopped fresh basil over the top.

Notes

If the sauce gets too thick, stir in a splash more broth or cream to loosen it. Pat chicken dry before seasoning for better browning. Do not boil cream vigorously to avoid curdling. For dairy-free version, substitute heavy cream with coconut cream and Parmesan with nutritional yeast. Chicken thighs can be used but adjust cooking time accordingly.
