  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • ½ cup chopped sun-dried tomatoes (packed in oil)
  • 1 cup chicken broth (240 ml)
  • ¾ cup heavy cream or half-and-half (180 ml)
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • ¼ teaspoon red pepper flakes (optional)
  • A handful of fresh basil or parsley, chopped

Instructions

  1. Pat the chicken breasts dry with paper towels, then season both sides generously with salt and black pepper. (5 minutes)
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Add chicken breasts and cook for about 5-6 minutes per side, or until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and set aside, tented with foil. (12 minutes)
  3. Reduce heat to medium. Add butter to the skillet. Once melted, stir in minced garlic and chopped sun-dried tomatoes. Cook for 1-2 minutes until fragrant and tomatoes soften, stirring often. (2 minutes)
  4. Pour in chicken broth, scraping the bottom of the skillet to lift brown bits. Let simmer gently for 3-4 minutes to reduce by half. (4 minutes)
  5. Stir in heavy cream (or half-and-half), grated Parmesan cheese, and dried Italian herbs. Simmer on low heat, stirring occasionally until sauce thickens, about 5-7 minutes. Adjust seasoning with salt, pepper, and red pepper flakes if using. (7 minutes)
  6. Nestle browned chicken breasts back into the skillet, spoon sauce over them. Simmer together for 3-5 minutes so chicken absorbs flavors. (5 minutes)
  7. Sprinkle chopped fresh basil or parsley over the top just before serving.

Notes

If sauce is too thick, add more chicken broth or cream to loosen. If too thin, simmer longer uncovered. Use room temperature chicken for even cooking. Avoid overcrowding pan to maintain golden crust. Simmer sauce gently to prevent curdling.
