Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it.
  2. Toss halved cherry tomatoes with 2 tablespoons olive oil, salt, and black pepper. Spread on baking sheet in a single layer.
  3. Roast tomatoes for 15-20 minutes until soft, caramelized, and bursting with juice.
  4. While tomatoes roast, bring a large pot of salted water to a boil. Cook pasta according to package instructions (10-12 minutes) until al dente. Reserve 1 cup pasta water and drain pasta.
  5. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add minced garlic and sauté 1-2 minutes until fragrant but not browned.
  6. Add chopped sun-dried tomatoes and stir for 1 minute to release flavor.
  7. Pour in chicken broth and heavy cream. Stir and simmer for about 5 minutes until slightly thickened. Add reserved pasta water gradually if sauce is too thick.
  8. Mix in grated Parmesan cheese until melted and smooth. Season with salt, pepper, and red pepper flakes if using.
  9. Add roasted cherry tomatoes to the sauce and stir gently to combine.
  10. Toss cooked pasta into the sauce, coating evenly. Add fresh basil and stir gently.
  11. Serve immediately, garnished with extra Parmesan and basil if desired.
