  • 6 bone-in, skin-on chicken thighs (about 3 pounds)
  • 2 tablespoons extra virgin olive oil
  • 34 garlic cloves, minced
  • 1/2 cup chopped sun-dried tomatoes (oil-packed recommended)
  • 1 cup heavy cream (240 ml)
  • 3/4 cup low sodium chicken broth (180 ml)
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach, roughly chopped (optional)
  • 1 teaspoon dried Italian seasoning (basil, oregano, thyme, rosemary blend)
  • Pinch of red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides generously with salt, pepper, and dried Italian seasoning.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering. Add chicken thighs skin-side down and cook for 6-7 minutes without moving until deep golden-brown. Flip and cook the other side for 5 minutes. Remove chicken and set aside.
  3. Reduce heat to medium. Add minced garlic and chopped sun-dried tomatoes to the same pan. Stir for about 1 minute until fragrant but not burnt.
  4. Pour in chicken broth, scraping up browned bits from the pan. Let simmer for 2 minutes, then stir in heavy cream and grated Parmesan. Simmer gently until sauce thickens slightly, about 3-4 minutes. Adjust salt and pepper, and add red pepper flakes if desired.
  5. Add chopped spinach and stir until just wilted, about 1-2 minutes.
  6. Nestle chicken thighs back into the creamy sauce, skin side up. Spoon sauce over the top.
  7. Reduce heat to low, cover the pan, and simmer for 8-10 minutes or until chicken reaches an internal temperature of 165°F (74°C). Alternatively, transfer skillet to a preheated 375°F (190°C) oven to finish cooking.
  8. Let chicken rest in the sauce for 5 minutes before serving. The sauce will thicken slightly as it cools.

Notes

Pat chicken dry for crispy skin. Avoid crowding the pan to ensure proper searing. Watch garlic carefully to prevent burning. If sauce thickens too much, add a splash of broth or cream to loosen. For extra crisp skin, broil chicken skin-side up for 2 minutes at the end, watching closely.
