A make-ahead breakfast that’s perfect for hosting, featuring creamy oats, peanut butter, and banana. Prep it the night before and wake up to a delicious, no-fuss meal that will impress your guests.

  • 1 cup (90g) rolled oats
  • 1 cup (240ml) whole milk (or 2%, oat milk, unsweetened almond milk, or coconut milk)
  • 1/2 cup (120g) plain Greek yogurt (or dairy-free yogurt)
  • 1/4 cup (60g) creamy peanut butter (natural, with just peanuts and salt)
  • 1 medium ripe banana, mashed
  • 2 tablespoons (30ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • 1 teaspoon (5ml) pure vanilla extract
  • Pinch of salt
  • For topping: 1/2 banana, sliced; 1 tablespoon peanut butter, warmed; 2 tablespoons chopped peanuts or walnuts; 1 tablespoon dark chocolate chips (optional)

Instructions

  1. Mash the ripe banana in a small bowl with a fork until mostly smooth (baby food consistency).
  2. In a medium mixing bowl, combine milk, Greek yogurt, peanut butter, mashed banana, honey or maple syrup, and vanilla extract. Whisk until the peanut butter is fully incorporated (about 30 seconds).
  3. Add rolled oats, chia seeds (if using), and a pinch of salt. Stir until evenly distributed. The mixture will look loose—this is normal.
  4. Divide the mixture evenly among four 8-ounce mason jars or airtight containers, filling each about three-quarters full.
  5. Seal the jars tightly and refrigerate for at least 6 hours, ideally 8–12 hours (overnight).
  6. Before serving, take jars out of the fridge about 10 minutes prior. Stir well—the chia seeds will have thickened the mixture. The texture should be thick and creamy, like pudding.
  7. Top with sliced banana, a drizzle of warm peanut butter, chopped nuts, and chocolate chips if desired. Serve cold or at room temperature.

Notes

Use old-fashioned rolled oats, not instant or steel-cut. For a vegan version, use plant-based milk, dairy-free yogurt, and maple syrup. For a nut-free option, substitute peanut butter with sunflower seed butter or tahini. Oats can be stored in the fridge for up to 4 days; add toppings just before serving. If oats are too thick, stir in a splash of milk. Can be frozen for up to 3 months (thaw overnight in the fridge).
