A creamy, no-cook overnight oats recipe with peanut butter and banana that’s perfect for busy mornings. This easy breakfast comes together in 5 minutes and tastes like a treat.

  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk (any kind)
  • 1/2 cup (120g) plain Greek yogurt
  • 3 tablespoons (48g) creamy peanut butter
  • 1 large ripe banana
  • 1 tablespoon (15ml) maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a small bowl, mash the ripe banana with a fork until mostly smooth with a few tiny lumps.
  2. In your jar or container, add the milk, Greek yogurt, peanut butter, maple syrup, and vanilla extract. Whisk or stir until the peanut butter is mostly incorporated.
  3. Spoon the mashed banana into the jar and stir until evenly distributed.
  4. Pour in the rolled oats, chia seeds (if using), and the pinch of salt. Stir thoroughly until everything is well combined, scraping the bottom of the jar.
  5. Seal the jar and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk. Serve cold or at room temperature, topped with sliced banana, a drizzle of peanut butter, and chopped peanuts if desired.

Notes

For best texture, use rolled oats (not instant or steel-cut). The oats taste even better on day 2. Let the jar sit at room temperature for 5 minutes before eating to enhance flavor. For a vegan version, use maple syrup, coconut yogurt, and dairy-free milk. For nut-free, use sunflower seed butter. Store in the refrigerator for up to 5 days.
