These creamy overnight peanut butter protein oats taste like peanut butter cookie dough for breakfast but are packed with protein, fiber, and all the good stuff that keeps you full until lunch. Ready in 5 minutes the night before, this no-cook breakfast is perfect for meal prep and busy mornings.

  • 1/2 cup (50g) rolled oats
  • 1/2 cup (120ml) milk of choice
  • 1/4 cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) peanut butter
  • 1 scoop (about 30g) vanilla or unflavored protein powder
  • 1 tablespoon (15ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • For topping (optional): sliced banana, dark chocolate chips, chopped peanuts, extra drizzle of peanut butter

Instructions

  1. Combine the dry ingredients: In your jar or container, add 1/2 cup rolled oats, 1 tablespoon chia seeds (if using), and a pinch of salt. Give it a quick stir.
  2. Mix the wet ingredients separately: In a small bowl or liquid measuring cup, combine 1/2 cup milk, 1/4 cup Greek yogurt, 2 tablespoons peanut butter, 1 scoop protein powder, 1 tablespoon honey or maple syrup, and 1/2 teaspoon vanilla extract. Whisk until smooth.
  3. Pour over the oats: Pour the wet mixture directly over the dry ingredients in your jar. Use a spatula to scrape every last bit out of the bowl.
  4. Stir thoroughly: Stir everything together until completely combined. Make sure you scrape the bottom and sides of the jar. The mixture should look uniform with no streaks of dry protein powder or unincorporated peanut butter.
  5. Seal and refrigerate: Put the lid on your jar and place it in the refrigerator. Let it sit for at least 6 hours, but overnight is best (8-12 hours).
  6. Add toppings in the morning: When ready to eat, take the jar out of the fridge. Give it a good stir. If the oats seem too thick, add a splash of milk (about 1-2 tablespoons) and stir until it reaches your desired consistency. Top with sliced banana, dark chocolate chips, chopped peanuts, and an extra drizzle of peanut butter if desired.
  7. Enjoy cold or warm: These oats are delicious straight from the fridge, or microwave the jar (without the metal lid) for 45-60 seconds for warm oats.

Notes

For dairy-free, use coconut yogurt and plant-based milk. For nut-free, swap peanut butter for sunflower seed butter. If you don’t have protein powder, add an extra tablespoon of peanut butter and an extra tablespoon of Greek yogurt. Stir thoroughly before refrigerating to avoid dry oats. The chia seeds are optional but help create a pudding-like texture. Store in the refrigerator for up to 5 days.
