  • 1 cup (90g) rolled oats (old-fashioned oats)
  • 1 large ripe banana (about 120g mashed)
  • 1/4 cup (64g) creamy peanut butter
  • 1 cup (240ml) milk of choice
  • 12 tablespoons (15-30ml) pure maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt

Instructions

  1. Mash the banana in a small bowl with a fork until mostly smooth with a few small lumps.
  2. In a mason jar or airtight container, combine the mashed banana, peanut butter, milk, maple syrup, and vanilla extract. Stir until the peanut butter is mostly incorporated.
  3. Add the rolled oats, chia seeds (if using), and salt. Stir very well, scraping the bottom and corners of the jar.
  4. Seal the jar tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  5. In the morning, stir the oats. If too thick, add a splash of milk. If too thin, let sit longer or add more chia seeds next time.
  6. Add desired toppings (sliced banana, extra peanut butter, dark chocolate chips, chopped peanuts, cinnamon, extra maple syrup) and serve cold or at room temperature.

Notes

Use rolled oats, not quick or steel-cut. Mash the banana thoroughly for best creaminess. Stir twice before refrigerating for even distribution. Adjust liquid based on peanut butter consistency. Leave at least an inch of space in the jar as oats expand. For best flavor, make a day ahead.
