  • 1 large yellow onion, diced
  • 34 cloves garlic, minced
  • 3 medium Russet potatoes (about 1.5 lbs), peeled and diced into 1/2-3/4 inch cubes
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream, at room temperature
  • 34 cups chopped kale (Lacinato or curly), tough stems removed
  • 12 tablespoons olive oil
  • Salt and black pepper to taste
  • 1/41/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried)

Instructions

  1. Heat 1 tablespoon olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add sliced sausage in a single layer and cook undisturbed for 2-3 minutes until browned. Stir and cook another 2-3 minutes. Transfer sausage to a plate with a slotted spoon, leaving rendered fat in the pot.
  2. Reduce heat to medium. Add diced onion to the pot and cook, stirring occasionally, until soft and translucent, about 4 minutes. Add minced garlic and red pepper flakes (if using) and cook for 30 seconds until fragrant.
  3. Add diced potatoes, chicken broth, and fresh thyme to the pot. Stir, scraping up any browned bits from the bottom. Bring to a boil, then reduce heat to a gentle simmer. Cover and cook for 15-20 minutes until potatoes are tender when pierced with a fork.
  4. Add chopped kale and stir until wilted, about 3-4 minutes.
  5. Return browned sausage to the pot. Pour in heavy cream and stir gently. Simmer for 2-3 minutes until heated through. Taste and adjust seasoning with salt and pepper.
  6. Ladle into bowls and serve hot with crusty bread or a side salad.

Notes

If soup is too thick, add a splash of broth or water. If too thin, simmer uncovered to reduce. Stir bottom of pot occasionally during simmering to prevent scorching. For best results, let cream come to room temperature before adding to prevent curdling. Leftovers keep refrigerated for up to 4 days; add broth when reheating as soup thickens. Freezes well for up to 3 months (cream may separate slightly upon thawing).
