Instructions

  1. Cook the bacon: Place chopped bacon in a large skillet over medium heat. Cook until crispy, stirring occasionally, about 8 to 10 minutes. Use a slotted spoon to transfer bacon to a paper towel-lined plate. Leave rendered fat in the pan.
  2. Sauté the aromatics: Add diced onion and celery to the same skillet with bacon fat. Cook over medium heat until softened and translucent, about 5 minutes. Add minced garlic and cook for 30 seconds more, just until fragrant.
  3. Layer the slow cooker: Place cubed potatoes in the bottom of the slow cooker. Top with the sautéed onion, celery, and garlic mixture.
