  • 8 oz cremini mushrooms, sliced
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth (low-sodium preferred)
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • ยฝ teaspoon black pepper
  • ยฝ teaspoon salt
  • 1 cup sour cream (full-fat)
  • 8 oz egg noodles, cooked
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Brown the ground beef (5-7 minutes): Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and no longer pink. Leave about a tablespoon of fat in the pan. Transfer the beef to the slow cooker.
  2. Sautรฉ the aromatics (4-5 minutes): In the same skillet, add the diced onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant. Scrape into the slow cooker with the beef.
  3. Cook the mushrooms (5-6 minutes): Add the sliced mushrooms to the skillet (add a tiny splash of oil if dry). Cook without stirring too much for 3-4 minutes until they release liquid and start to brown. Add to the slow cooker.
  4. Make the sauce base (2 minutes): Sprinkle the flour over the vegetables in the skillet and stir for about 1 minute. Slowly pour in the beef broth, Worcestershire sauce, Dijon mustard, smoked paprika, salt, and pepper. Stir and scrape up any browned bits. Pour this mixture into the slow cooker.
  5. Slow cook (4-6 hours on low or 2-3 hours on high): Stir everything together in the slow cooker. Cover and cook on low for 4-6 hours or on high for 2-3 hours.
  6. Finish with sour cream (5 minutes before serving): About 10 minutes before serving, stir in the sour cream until fully incorporated. Let it warm through for 5 minutesโ€”do not let it boil.
  7. Cook the egg noodles: While the sour cream is warming, cook the egg noodles according to package directions. Drain well.
  8. Serve: Spoon the stroganoff over the hot egg noodles and garnish with fresh parsley. Serve immediately.

Notes

Don’t skip browning the beef and mushroomsโ€”it builds deep flavor. Add sour cream at the end to prevent curdling. If sauce is too thin, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir in, then cook 10 more minutes.
