Instructions

  1. Prep your ingredients: Dice the onion, mince the garlic, drain and rinse the beans and corn. Cube the cream cheese and let it sit at room temperature while everything else cooks.
  2. Layer ingredients in the slow cooker: Place the chicken breasts in the bottom of a 6-quart slow cooker sprayed with nonstick spray. Add the diced onion, minced garlic, drained beans, corn, and diced green chiles on top. Sprinkle the cumin, oregano, chili powder, smoked paprika, garlic powder, onion powder, salt, and pepper evenly over everything. Pour the chicken broth around the edgesโ€”try not to wash the spices off the chicken. Don’t stir yet.
  3. Cook on low for 6-7 hours or high for 3-4 hours. The chicken is done when it reaches 165ยฐF internally and shreds easily with a fork.
