Ingredients

Scale
  • 16 oz cream cheese, softened to room temperature
  • 1 cup cooked shredded chicken (rotisserie chicken works well)
  • 1/2 cup buffalo wing sauce (recommended: Frank’s RedHot Original)
  • 1/2 cup ranch dressing (recommended: Hidden Valley)
  • 1 cup shredded sharp cheddar cheese, divided
  • 1 cup shredded mozzarella cheese, divided
  • 1/4 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika (optional)
  • Salt and black pepper to taste
  • 1/3 cup sour cream (for drizzle)
  • 12 tablespoons milk (for drizzle)
  • Tortilla chips (for serving)
  • Celery sticks (for serving)
  • Carrot sticks (for serving)
  • Crusty bread or baguette slices (for serving)

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the center of the oven.
  2. Prepare your shredded chicken: if using rotisserie chicken, remove skin and bones, then shred the meat using two forks or your fingers. You want about 1 cup of shredded chicken.
  3. Shred your cheeses: grate the cheddar and mozzarella cheeses if you bought blocks. Set aside 1/4 cup of each cheese for the top layer.
  4. Mix the cream cheese base: in a large mixing bowl, add the softened cream cheese, 1/2 cup buffalo wing sauce, ranch dressing, 1/4 cup sour cream, garlic powder, onion powder, and smoked paprika if using. Beat with a hand mixer on medium speed until smooth and well combined.
  5. Fold in the chicken and most of the cheese: add the shredded chicken, 3/4 cup shredded cheddar, and 3/4 cup shredded mozzarella to the cream cheese mixture. Fold together with a spatula until evenly distributed. Taste and adjust seasoning if needed.
  6. Transfer to your baking dish: spoon the mixture into a greased 9-inch oven-safe skillet or baking dish. Spread evenly and smooth the top.
  7. Top with remaining cheese: sprinkle the reserved 1/4 cup cheddar and 1/4 cup mozzarella evenly over the top.
  8. Bake the dip: place the dish in the preheated oven and bake for 15-18 minutes, or until hot and bubbly around the edges and the cheese on top is fully melted.
  9. Make the sour cream drizzle while the dip bakes: in a small bowl, combine 1/3 cup sour cream with 1 tablespoon of milk. Stir until smooth. Add another tablespoon of milk if needed to reach a piping consistency. Spoon into a piping bag or zip-top bag and snip off a tiny corner (about 1/8 inch wide).
  10. Create the spiderweb design: once the dip comes out of the oven, let it rest for 2-3 minutes. Starting from the center, pipe a small circle of sour cream, then pipe concentric circles around it, spacing them about 1 inch apart, until you reach the edges. Take a toothpick or knife tip and drag it from the center outward through all the circles, like spokes on a wheel. Repeat 8 times around the dip.
  11. Serve immediately: place the hot dip on a trivet or heat-safe surface. Surround with tortilla chips, celery sticks, carrot sticks, and crusty bread slices.

Notes

Make sure cream cheese is softened to room temperature for a smooth base. Shred your own cheese for best melting. Let the dip rest 2-3 minutes before piping the sour cream drizzle to prevent it from melting. The dip can be prepared up to 24 hours in advance and baked just before serving. Leftovers keep in the refrigerator for up to 4 days; reheat in a 350°F oven for 10-15 minutes.
