Ingredients

Scale
  • 8 thick slices brioche or challah bread (day-old preferred)
  • 8 ounces cream cheese, softened
  • 1 cup fresh strawberries, hulled and sliced
  • 4 large eggs, room temperature
  • 1 cup whole milk or 2%
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • 2 tablespoons granulated sugar
  • 2 tablespoons unsalted butter
  • 1/2 cup pure maple syrup
  • 2 tablespoons powdered sugar (optional)

Instructions

  1. Prepare the Cream Cheese Filling: In a medium bowl, beat the softened cream cheese with 1 tablespoon of granulated sugar until smooth and creamy. Gently fold in the sliced strawberries. Set aside.
  2. Mix the Custard: In a large bowl, whisk together eggs, milk, vanilla extract, remaining sugar, and cinnamon until well combined and slightly frothy.
  3. Assemble the French Toast: Carefully cut a pocket into each slice of bread without cutting all the way through. Spoon about 2 tablespoons of the cream cheese-strawberry mixture into each pocket, spreading evenly.
  4. Soak the Bread: Dip each stuffed slice into the custard mixture, soaking for 20-30 seconds on each side until moist but not soggy.
  5. Cook the French Toast: Heat 1 tablespoon butter in a large skillet over medium heat. Cook soaked slices for 3-4 minutes per side until golden brown and cooked through. Repeat with remaining slices, adding more butter as needed.
  6. Make the Maple Glaze: In a small saucepan over low heat, combine maple syrup and powdered sugar. Stir gently until sugar dissolves and syrup thickens slightly, about 3-4 minutes. Remove from heat and keep warm.
  7. Serve: Stack warm French toast slices on plates, drizzle generously with maple glaze, and garnish with extra fresh strawberries if desired.

Notes

Use day-old thick bread like brioche or challah for best soaking without falling apart. Soak bread just enough to be moist but not soggy. Cook on medium heat to avoid burning. For vegan version, use plant-based cream cheese, almond or oat milk, and flaxseed or chia egg substitute. Maple glaze can be made dairy-free by skipping powdered sugar or using a dairy-free sweetener.
