  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cups low sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus extra for serving
  • 1 teaspoon dried Italian seasoning (basil, oregano, thyme blend)
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Dice the onion, carrots, and celery finely. Mince the garlic cloves. This prep should take about 10 minutes.
  2. Heat 2 tablespoons of olive oil in a large Dutch oven over medium heat. Add the sausage, breaking it apart with a spoon. Cook until browned and cooked through, about 7-8 minutes. Transfer the sausage to a bowl, leaving the rendered fat behind.
  3. In the same pot, add the diced onions, carrots, and celery. Stir occasionally, cooking until softened and fragrant, about 5-6 minutes. Add the minced garlic and cook for another minute, being careful not to burn it.
  4. Pour in 4 cups of chicken broth. Add the cooked sausage back in and sprinkle 1 teaspoon of dried Italian seasoning. Bring to a gentle boil, then reduce heat to a simmer. Let it cook uncovered for 10 minutes to meld flavors.
  5. Stir in 9 ounces of tortellini. Cook the tortellini in the soup according to package instructions or until tender but not mushy, about 3-5 minutes if fresh.
  6. Lower the heat and stir in 1 cup heavy cream and 1/2 cup grated Parmesan cheese. Mix well until the cheese melts and the soup thickens slightly. Season with salt and pepper to taste.
  7. Ladle the soup into bowls and sprinkle with fresh chopped parsley and extra Parmesan if desired. Serve immediately.

Notes

If the soup thickens too much after resting, thin with a splash of broth or water before reheating. Stir gently after adding cream to prevent curdling. For dairy-free, swap heavy cream with coconut cream and Parmesan with nutritional yeast. Use gluten-free tortellini for gluten-free diets.
