  • ยพ cup (180ml) whole milk, warmed slightly
  • ยฝ cup (115g) unsalted butter, melted and cooled
  • 2 teaspoons pure vanilla extract
  • Zest of 1 lemon (optional)
  • 1 ยฝ cups (375g) ricotta cheese, drained well
  • 1 cup (240ml) heavy cream, cold
  • โ…“ cup (40g) powdered sugar, sifted
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla bean paste or extract
  • Optional garnishes: fresh berries (strawberries, blueberries, raspberries), toasted almond slices or crushed pistachios, light dusting of powdered sugar

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease a 9-inch round cake pan thoroughly with butter and lightly dust with flour. Line the bottom with parchment paper.
  2. In a large bowl, sift together the all-purpose flour, baking powder, and salt. Whisk to combine evenly.
  3. In a separate bowl, beat the eggs and granulated sugar until pale and fluffy, about 3-4 minutes with an electric mixer. Add warmed milk, melted butter, vanilla extract, and lemon zest. Stir gently to combine.
  4. Slowly add the dry ingredients to the wet mixture, folding gently with a spatula until just combined. Avoid overmixing.
  5. Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Start checking at 28 minutes.
  6. Let the cake cool in the pan for 15 minutes, then turn out onto a cooling rack to cool completely.
  7. In a chilled bowl, whip the heavy cream to soft peaks using an electric mixer.
  8. In another bowl, combine ricotta, powdered sugar, lemon juice, and vanilla. Fold the whipped cream gently into the ricotta mixture until smooth and airy.
  9. Slice the cooled cake in half horizontally. Spread half the creamy filling on the bottom layer, then place the top layer carefully. Cover the top and sides with the remaining filling.
  10. Decorate with fresh berries and nuts if desired.
  11. Refrigerate the assembled cake for at least 2 hours before serving to set the filling and meld flavors.

Notes

If ricotta is too watery, drain it overnight in cheesecloth. Bring eggs and milk to room temperature before mixing. Avoid overmixing the batter to keep the cake light. Whip cream to soft peaks to avoid turning it into butter. Slice cake when cold for clean cuts. For dairy-free, substitute ricotta with coconut cream-based cheese and heavy cream with coconut cream. For gluten-free, use almond flour instead of all-purpose flour.
