  • 4 ounces cream cheese, softened
  • 1/4 cup plain full-fat Greek yogurt
  • 1/2 cup roasted red peppers, drained and roughly chopped
  • 2 tablespoons honey
  • 1 tablespoon extra virgin olive oil
  • 1 small garlic clove, minced (optional)
  • 1 teaspoon fresh lemon juice
  • Freshly ground black pepper, to taste
  • Chopped fresh parsley or dill for garnish (optional)

Instructions

  1. Drain the roasted red peppers well to avoid watery dip. Mince garlic finely if using. Soften cream cheese by leaving it at room temperature for about 30 minutes or microwave for 10 seconds.
  2. In a food processor, add feta cheese, softened cream cheese, and Greek yogurt. Pulse a few times to start breaking down the cheeses.
  3. Process continuously for 2-3 minutes until the mixture is light, creamy, and spreadable. Scrape down the sides with a spatula midway to ensure even blending.
  4. Add minced garlic, fresh lemon juice, and freshly ground black pepper. Pulse a couple of times to incorporate. Taste and adjust seasoning as needed.
  5. Add half of the chopped roasted red peppers and pulse gently a few times to fold them in without pureeing completely.
  6. Spoon the whipped feta dip into a serving bowl. Smooth the top, arrange remaining roasted peppers on top, drizzle honey evenly, then drizzle olive oil and sprinkle fresh herbs if using.
  7. Serve immediately or chill for 15-20 minutes to let flavors meld. If dip is too thick, loosen with a splash of water or more Greek yogurt; if too runny, add more cream cheese or feta and pulse again.

Notes

Soften cream cheese before starting for best texture. Drain roasted red peppers well to avoid watery dip. For extra smoothness, strain Greek yogurt to remove excess whey. Can be made ahead and chilled for up to 24 hours. If too thick or thin, adjust with yogurt or cream cheese accordingly. Clean food processor immediately after use to avoid lingering feta smell.
