  • 2 tablespoons olive oil

Instructions

  1. Remove chicken thighs from the fridge and pat each piece dry with paper towels to ensure crispier skin.
  2. Season both sides generously with salt, black pepper, smoked paprika, garlic powder, and onion powder.
  3. Let the chicken rest at room temperature for 10 minutes to absorb flavors and reduce chill.
  4. Heat a cast iron skillet or heavy pan over medium heat and add 2 tablespoons of olive oil. Heat until shimmering but not smoking.
  5. Place the chicken thighs skin side down in the pan without overcrowding. Cook undisturbed for 12-15 minutes until the skin is deep golden brown and crispy.
  6. Flip the chicken thighs using tongs, reduce heat to medium-low, and cook for another 8-10 minutes until the internal temperature reaches 165°F (74°C).
